Traditional Lebanese Fatteh

Welcome to our culinary journey! Lebanese fatteh is a traditional dish that is often served for breakfast or as a starter. It combines crusty bread, creamy yogurt and chickpeas in a tasty layering.

Ingredients:

▫️ 400 g (1 can) chickpeas, rinsed and drained
▫️ 1 large eddplant, sliced into rounds or cubes
▫️ 2 large pita bread loaves, torn into small pieces
▫️ 500 g natural yogurt
▫️ 2 tablespoons Tahini (sesame paste)
▫️ 2 cloves of garlic, finely chopped
▫️ 2 tablespoons of lemon juice
▫️ 2 tablespoons of pine nuts, toasted
▫️ 2 tablespoons of butter or ghee
▫️ 1 teaspoon cumin
▫️ 1 teaspoon paprika
▫️ Salt and black pepper to taste
▫️ Pomegranate seeds for garnish
▫️ Fresh parsley for garnish

Instructions:

  • Prepare the eggplant: Preheat the oven to 200°C. Slice the eggplant into rounds or cubes, toss with olive oil and a pinch of salt, then spread on a baking sheet. Roast for about 20-25 minutes until soft and golden. Alternatively, you can fry the eggplant pieces in a pan with olive oil until they are golden and tender.
  • Prepare the bread: Tear the pita bread into small pieces and spread on a baking sheet. Bake at 180°C for about 10 minutes until crispy and golden. Alternatively, you can toast the bread in a pan with some oil until it is crispy.
  • Prepare the chickpeas: Heat the chickpeas in a pot with water until warm. Drain and set aside.
  • Prepare the yogurt sauce: In a bowl, mix the yogurt with tahini, garlic, and lemon juice. Season with salt and pepper.
  • Layer bread, chickpeas, and eggplant: In a deep dish or on a plate, start with the crispy bread, then layer the warm chickpeas and roasted or fried eggplant on top.
  • Cover with yogurt: Evenly spread the yogurt sauce over the eggplant and chickpeas.
  • Add toppings: In a small pan, heat the butter or ghee and lightly brown the pine nuts. Sprinkle over the Fatteh. Garnish with cumin, paprika, and fresh parsley.

This dish should be served immediately to enjoy the crispness of the bread, the creamy texture of the yogurt, and the fresh burst of flavor from the pomegranate seeds.
