Ingredients:

▫️ 1 kg minced beef or lamb
▫️ 1 large onion, finely chopped
▫️ 2 slices of white bread
▫️ 1 cup milk
▫️ 2 tablespoons curry powder
▫️ 1 tablespoon apricot jam
▫️ 2 tablespoons chutney
▫️ 1 tablespoon vinegar
▫️ Salt and pepper to taste
▫️ 1/2 cup raisins (optional)
▫️ Oil for frying


For the topping:

▫️ 3 large eggs
▫️ 1 cup milk
▫️ 1/2 teaspoon turmeric powder for color (optional)

Instructions:

  • Preheat the oven: Preheat your oven to 180°C.
  • Prepare the bread: Soak the bread slices in 1 cup of milk until soft. Mash the bread into a pulp.
  • Make the filling:
    • Heat oil in a pan and sauté the chopped onions until translucent.
    • Add the minced meat and cook until browned.
    • Mix in the curry powder, apricot jam, chutney, vinegar, salt, pepper, and soaked bread. Stir well to combine.
    • If using raisins, add them to the mixture.
  • Bake the filling: Transfer the meat mixture to a greased ovenproof dish and press it down evenly.
  • Prepare the topping: In a separate bowl, beat the eggs and mix in the milk and turmeric powder.
  • Finish and bake:
    • Pour the egg mixture over the meat filling, ensuring it covers the entire surface.
    • Bake in the preheated oven for about 30-40 minutes or until the topping is set and golden brown.
  • Serve:
    • Remove from the oven and let it cool for a few minutes before slicing.
    • Bobotie is traditionally served with yellow rice and a side of chutney.
